Origin Story:
The cherries selected for this lot were collected at altitudes between 1700m and 2100m. These beans were then dried on raised African beds for 25-30 days and were processed at the washing station by young coffee farmers before being sorted by more experienced coffee farmers, mainly women, providing them a place at the table in the supply chain.
At Alma and our family farm, Finca Terrerito, we believe that investing directly in groups and companies working directly in origin will allow investment and capital to return to those most in need. We chose to work with Umuko Coffee Group and owner Jean Christophe (Chris) Rusatira as they share our same mission of giving back to the farmers and the communities that produce this coffee.
Jean and his family have been growing and processing coffee in Rwanda for more than four decades, and this is the second year in a row we have had the pleasure of working with them. We’re especially thrilled because of their dedication to employing women and working with young coffee farmers to keep the craft of coffee farming alive.
Roast Story:
What stood out most with this coffee was the soft floral notes along with the tasting notes of dried strawberry and aftertaste of lychee. Anything but a light roast would have hidden these flavors.
We have had this coffee since February, but have finally decided to release it now as the juicy and tea-like notes pair perfectly with the 90+ degree North Georgia temperatures we’ve been experiencing lately.
Brew Recommendation:
We recommend brewing Rwanda on a V60 due to the thinner filter which will allow for the more delicate and brighter notes like lychee to come through. For a fun and refreshing experience, try the following flash brew recipe:
-Start with 20g of medium ground coffee
-140g of ice in the carafe
-Brew 200ml of 203 degree water
The final brew will be at a 1:17 ratio. This coffee will be a bit thinner, but with a tea-like body and floral notes. This will allow the notes of lychee and dried strawberry to shine through.
